I'm currently tied to a deal on Orange with my Samsung Tocco.
It's a great phone but I'm keen on the Nokia N96.
My wife's due for an upgrade on O2 and she's offered to get the N96.
My question is:- 1) Is it possible to unlock the N96 to Orange network and how?
2) If so, can I keep my same 'Orange' number?

Best case scenario, you get the N96 and it is already unlocked to other networks! Failing that, then you have to get the unlock code, either from the netowrk themselves (who have to provide an unlock service after a certain duration of signing up), or from one of the online unlockers.
It's a bit more risky, but there a few (like this one) which seem to provide the service at a nominal fee.
The best thing about it is that if you follow any of these procedures, the unlocked N96 should work just fine with your existing Orange SIM card, with no need to change numbers or anything else.
